Terrior - Uji Kyoto

[Uji: A Sacred Land for Tea, Nurtured by Terroir]

Our matcha originates from Uji, a region with over 800 years of history as the birthplace of Japanese tea, where the natural conditions are miraculously suited for tea cultivation.

  • Climate: With an average annual temperature of 14-16°C and annual precipitation of approximately 1500mm, Uji offers ideal conditions for tea growth. The large diurnal temperature variation, characteristic of the basin, is especially crucial for condensing umami components (Theanine) in the tea leaves.

  • Blessings of Mist: The "river mist" rising from the Uji and Kizu rivers gently envelops the tea fields, acting as a natural shading curtain. This protects the tea leaves from harsh sunlight, inhibiting the conversion of umami components into catechins, and yielding a mellow flavor. The aroma of tea grown in this mist is known as "Kirika" (mist aroma), a significant characteristic of Uji tea.

  • Soil: Tea gardens along the Uji and Kizu rivers are located on alluvial fans and river terraces, blessed with fertile, well-drained soil. The slightly acidic soil (pH 4.5-5.5), preferred by tea plants, is also a crucial factor supporting healthy growth and nutrient absorption.

[The Producer: Artisans of Organic Cultivation]

This exceptional matcha is carefully cultivated by producers who have dedicated themselves to tea in Uji for many years. We are "Organic JAS Certified" and practice cultivation methods based on nature's principles, without any pesticides or chemical fertilizers.

  • Commitment to Soil Health: We apply organic fertilizers such as rapeseed oil cake and fish meal to enrich the soil, fostering a vibrant soil environment where microorganisms thrive. By ensuring that microorganisms actively decompose organic matter and supply nutrients in a form readily absorbable by plants, the tea plants can fully express their inherent vitality, developing robust aromas and flavors.

  • Masterful Craftsmanship: While organic cultivation is labor-intensive and time-consuming, our producers meticulously assess the health of the tea plants and thoroughly implement soil management and cultivation methods tailored to the local land. Over years of experience and expertise allow us to achieve the unique flavor of young leaves, with a sweet aroma and unparalleled rich umami.
