Here, abundant rain falls throughout the year, and especially in early spring, morning mist rises from the Uji River, gently enveloping the tea fields. This mist acts as a natural shade, protecting the tea leaves from direct sunlight and helping them accumulate rich umami components like amino acids (Theanine). The significant diurnal temperature variations also play a crucial role, allowing the tea leaves to grow slowly and condense deep flavors. Well-drained soil and fertile land enriched by the river's minerals form the bedrock of our matcha's unwavering quality.

Traditional Techniques Weave a Tapestry of Bliss
The blessings of the land and the sincere efforts of our producers culminate in a single cup of blissful matcha through traditional tea-making techniques. Approximately 20 to 30 days before harvest, the tea fields are covered to block sunlight through "shade cultivation." This process maximizes the umami component Theanine and suppresses astringent catechins. Only the tender new buds are picked, then steamed without kneading, and gently dried into "Tencha" (raw material for matcha), which is then slowly ground in a stone mill. This traditional method, where even an electric stone mill grinds only about 40g per hour, minimizes friction heat, preserving the matcha's fine texture, vibrant color, and delicate aroma, yielding an exquisite mouthfeel. With a single sip, you will surely feel the richness of Uji's nature, the producers' passion, and the inherited craftsmanship.

[How to Prepare Hot Matcha (Usucha)]

Prepare the Matcha: Place 1.5-2g of matcha (2 chashaku scoops or 1 heaped teaspoon) into a matcha bowl. We recommend sifting the matcha to prevent lumps.

Add Hot Water: Pour approximately 60ml of hot water at the appropriate temperature (around 80°C). Using boiling water directly can result in excessive bitterness.

Whisk: Using a bamboo whisk (chasen), rapidly move your wrist back and forth to mix the matcha and water thoroughly. Whisk from the bottom of the bowl until a fine, even foam covers the surface.

Serve: The matcha is ready when it has a smooth consistency and a delicate foam on top.
[How to Prepare Cold Brew Matcha (Recommended for Summer)]

Place 2g of matcha into a clean bottle and add 150ml of cold water.

A. To maintain its quality and freshness, please store your tea in a cool, dark place, away from high temperatures, humidity, and direct sunlight. Ensure the package is sealed tightly after each use. We recommend consuming the tea promptly after opening to enjoy its best aroma and flavor. Usually, matcha/secha's aroma and flavor will go down from 2 to 3 weeks.
