Hand-Picked Matcha: Asahi
A Silence of Strength and Gentleness.
Cultivated in the historic terroir of Uji, Kyoto. This single-cultivar matcha, "Asahi," is hand-picked from the first flush of spring. It offers an experience of profound Umami with minimal astringency—a taste that is powerful, yet remarkably gentle. Ideally suited for Koicha (thick tea) in the tea ceremony.
The Art of Shadow: Tanagake
In the pursuit of the ultimate Umami, we embrace the darkness.
The "Asahi" cultivar is a masterpiece born for Tencha (matcha material). By utilizing the traditional "Tanagake" (canopy) shading method for over 30 days before harvest, we block out direct sunlight. This stress compels the tea leaves to produce high levels of chlorophyll and prevents Theanine (umami) from converting into Catechins (astringency).
The result is a deep emerald green and a savory depth that defies the concept of tea.
A Touch of Devotion
True quality resides in the fingertips. We employ "Tezumi" (hand-picking) to select only the tenderest new buds of the spring. This inefficient, yet essential process ensures that no hard stems or old leaves compromise the purity of the flavor.
The leaves are then processed by a distinguished factory in Kyoto. Their uncompromising steaming and drying techniques lock in the freshness, creating a Matcha that is both powerful and elegantly gentle.
For a Moment of Clarity
The Koicha Ritual
The quality of "Asahi" shines brightest in Koicha (thick tea). Knead the powder with a small amount of hot water. The texture is like velvet soup, delivering a direct impact of pure umami to your senses.
Traditional Pairing
This matcha possesses a strong character. It pairs exceptionally well with traditional "Nerikiri" or seasonal Wagashi. The sweetness of the confection enhances the savory depth of the tea.
The Origin & Producer
Origin: Uji, Kyoto Prefecture. The birthplace of Japanese tea culture. The foggy basin climate and well-drained soil create the ideal terroir for premium tea cultivation.
Producer & Manufacturing: Sourced from trusted tea farmers in Uji and processed at a prestigious factory recognized with the Minister of Agriculture, Forestry and Fisheries Award. We prioritize "Quality" through the inherited skills of veteran tea masters.
